We are proud to introduce our new head chef at The Colosseum, Luca Romano. With an impressive track record and a passion for the culinary arts, we are thrilled to have Luca as part of our team.

**A Journey Through Taste**

Luca began his career as Chef De Partie at the Phoenix Pub & Restaurant in London, where he quickly demonstrated his talent for cooking and presentation. From there he worked as head chef at several venues in Bristol, including Café in the Park and Watershed, where he not only managed the kitchen team but also developed menus and ensured a high standard of food.

**From Rome via London to Bristol**

Luca ran Modo Bar & Kitchen, in Lecce, where within two years he managed to be ranked number one on TripAdvisor among 210 restaurants. In 2021, the restaurant was also mentioned in the Lonely Planet guide, as the only place to eat in the area. His time at Mesa Tapas Restaurant and Hotel du Vin has also helped shape his skills in new innovative ways to serve modern classics that lean on his Italian Heritage.

**A Passion for Perfection**

Luca’s experience also includes a period at the renowned Hotel Du Vin, where as Senior Sous Chef he helped maintain a high standard of food delivery. His ability to balance creativity with practical skills makes him an invaluable leader in the kitchen.

We’re thrilled to introduce Dael Jackman, the new General Manager of The Colosseum, Bristol. With extensive experience and a passion for hospitality, Dael is set to bring fresh ideas and exceptional service to our venue.

Dael's career in hospitality began at the Alma Tavern in Bristol. As Bar Supervisor, he honed his skills in customer service and team management over five years, establishing a solid foundation for his future roles.

**Driving Innovation at Oil Basin Brewhouse**

At Oil Basin Brewhouse in Worcester, Dael served as General Manager. His innovative promotions and strategic initiatives boosted the brewhouse’s reputation and revenue, turning it into a bustling hub for craft beer enthusiasts.

**Elevating Spirits at Church End Brewery**

Dael’s role as Premium Spirits Supervisor at Church End Brewery in Warwickshire showcased his expertise in market trends and premium spirits. His efforts significantly increased sales and attracted spirit aficionados to the microbrewery.

**Enhancing Experiences at Diglis House Hotel**

At Diglis House Hotel in Worcester, Dael thrived as Restaurant Manager. The charming riverside hotel benefited from his ability to create memorable dining experiences, solidifying its reputation as a top choice for travelers.

**Delivering Excellence at The Grand Hotel**

Most recently, Dael was Assistant Restaurant Manager at The Grand Hotel in York. His contributions in maintaining high standards and ensuring a 5-star guest experience were key to the hotel’s ongoing success and high guest ratings.
